Mark Schatzker is the author of “The Dorito Effect: The Surprising New Truth About Food and Flavor” and is the writer in residence at the Modern Diet and Physiology Research Center, at Yale University. In his talk, he will reveal how technology has altered the flavor of the food we eat, both natural and processed, and how this has corrupted one of the most basic human instincts, the drive to eat, which is causing the greatest preventable health crisis of our time.
